Apple now tells you to enter the password for your Apple ID account in a screen labeled Screen Time Passcode Recovery.
To change your restrictions passcode on an iPhone, you'll need to go into your Settings. Where you go from there depends on your iOS version.
Don't forget your Screen Time passcode, which is not the same as your Lock Screen passcode. It's pretty hard to recover from a lost Screen Time passcode, so add it to your password manager.
